  • Spaghetti or Penne Pasta350 gram
  • Olive Oil59.1 ml
  • Onion1 large
  • Garlic4 cloves
  • Red Chili Flakes2.5 ml
  • Canned Chopped Tomatoes400 gram
  • Fresh Spinach200 gram

  • Black Pepper2.5 ml
  • Water (for pasta)2 liter

Instructions

Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta.

While the pasta is cooking, finely chop the onion and mince the garlic cloves.

Heat the olive oil in a large pan or skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.

Add the minced garlic and red chili flakes to the pan. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.

Pour in the canned chopped tomatoes, stir well, and bring to a gentle simmer. Cook for 8-10 minutes, allowing the sauce to thicken slightly. Season with salt and black pepper.

Add the fresh spinach to the pan, stirring until it wilts into the sauce, which should take about 2-3 minutes.

Add the drained pasta to the pan with the sauce. Toss everything together, adding a splash or two of the reserved pasta water as needed to create a glossy sauce that coats the pasta.
